Salads are delicious and irrisistable when done right. I love salads with some crunch (ex. pine nuts, almonds, pecans, etc.). The following is a vinaigrette that goes well with most salads:
Warm Mustard Vinaigrette:
2 tbsp olive oil
1 shallot, diced
2 tbsp dijon mustrard
1/2 c champagne wine vinegar (or white wine vinegar)
*optional – tbsp of organic, opaque apple juice (for added sweetness)
1. Put olive oil and shallot in skillet and saute over medium heat untill shallot softens (approx. 5 mins)
2. Add mustard, stir until combined and then add vinegar. Bring mixture to a boil, stirring constantly for about 5 minutes. Dressing will thicken slightly. Serve warm over salad.
Makes 6 servings.
